Cheap & Easy Cookies
Enjoy eating these light and soft baked cookies. Perfect for a gift to bring to a dinner party, for a friend, work or just for yourself :)
A plus with these cookies is that they are CHEAP! Thats my favorite :) Stock up the pantry when these items (Cake mixes and Cool Whip) go on BOGO or 10/10. I promise you won't regret it.
Experiment with these cookies yourself! See what you have in the pantry and fridge, set the oven to 350 degrees and get out your basics; which are:
- 1 box Cake mix
- 1 tub Cool Whip
- 1 Large egg
Instructions:
- Preheat oven to 350'
- In medium bowl, beat cool whip, egg and cake mix until well blended. (dough will be thick and sticky) - I find it easier to use Kitchen aid mixer
- Drop by tablespoonfuls into a bowl of powdered sugar and roll to coat OR right onto baking sheet (depends on the type of cookie you are creating).
- Place cookies onto parchment lined cookie sheet OR onto lightly sprayed non stick cookie sheet
- Bake for 10-12 minutes
- When removed from oven, let cookie rest before removing or they will break apart
*Thats a total prep time of 5 minutes, bake time ~10 minutes = Total time 20 minutes after clean up :)

Depending on the cake mix that you have...
Here are some Cookie ideas -
ADD IN'S - chocolate chips, nuts, coconut shavings, fresh herbs, citrus grind, peanut butter, nutella, marshmellows, rice krispie treats, sprinkles, oreos, pretzels, crispy chopped bacon, chips, 1/2 cup pudding mix, kahlua and more! Be Creative :)
*Note* I have made different varieties of these cookies and sometimes the cookies came out flat and chewy after cooled OR puffy and light. This all depends on the cake mix.
If you have a cake mix that has pudding in it, they then won't go flat.
If you thaw out the cool whip slightly, its easier to mix.
